Cookies with edible flowers

Want to make colorful cookies? It's possible! And you can take that very literally: flowers from your own garden can also be the ideal ingredient to decorate your cookies with! How do you make those beautiful and edible cookies? Follow the recipe below!

What do you need

  • 200gr flour
  • 75g sugar
  • 1 egg
  • 1 packet of vanilla-flavored sugar
  • 125gr baking butter
  • 1 tablespoon cold water
  • Baking paper
  • Rolling pin
  • Round cookie cutter
  • Flower sugar
  • Baking brush
  • Scale

  • Plastic foil
  • Cucumber herb

We chose cucumber herb because the flowers taste sweet and they have a beautiful blue color. You can also use other edible flowers such as violets, nasturtiums or lavender.

Step 1

Rinse the flowers and gently pat them dry.

Step 2

Preheat the oven to 170°.

Step 3

Weigh your ingredients accurately. Mix the flour, sugar and vanilla sugar in a large bowl. Add the butter in cubes.

Step 4

Separate the egg yolk from the egg white and add the egg yolk. We will need the egg white later. Finally add a tablespoon of cold water.

Step 5

Knead the dough with your hands and roll into a firm ball. Wrap the dough in a piece of plastic wrap and let it rest in the refrigerator for half an hour.

Step 6

Sprinkle some flour on a clean surface and roll out the dough with a rolling pin. Using the cutter, cut out nice circles and place them on a baking tray lined with baking paper.

Step 7

Bake the cookies for about 15 minutes, until they are nice and golden brown. Let them cool down for a while.

Step 8

Brush the tops of the cookies with the beaten egg white. Carefully press a flower into it and brush again with some egg white. 

Step 9

Place the cookies back on the baking tray and bake in the oven for another two minutes. When the cookies have cooled, sprinkle them with icing sugar.
